Chicken Adobo Recipe

Adobo refers to a usual and very well known cooking process home-grown in the Philippines. This dish originates from the north part of the country. Normally, pork, chicken or liver, or a mixture of pork, chicken and liver, are gradually cooked in soy sauce, vinegar, garlic, bay leaf, and peppercorns. Some wanted it to have some potatoes and hard boiled eggs.

Chicken Adobo Ingredients:
2 lbs chicken, cut into serving pieces
3 pcs dried bay leaves
4 tbsp soy sauce
4 tbsp vinegar
3 cloves garlic, minced
2 cups water
1/4 cup cooking oil
salt and pepper


Chicken Adobo Cooking Instructions:
1. In a large container, combine the soy sauce and garlic then marinade the chicken overnight
2. Place the cooking oil in a pan and apply heat
3. When the oil is hot enough, put-in the marinated chicken
4. Add water and bring to a boil
5. Add the dried bay leaves and simmer for 30 minutes or until the chicken is tender
6. Add vinegar, salt, and pepper and simmer for 10 to 12 minutes
7. Serve hot. Share and Enjoy!

Pork Asado Ingredients:
1 1/2 lbs pork
1 teaspoon five spice powder
1/2 cup soy sauce
1/3 cup brown sugar
1 teaspoon garlic, minced
2 tablespoons cooking rice wine
1/4 teaspoon salt
1 to 2 cups water


Pork Asado Cooking Instructions:
1. Combine soy sauce, five spice powder, garlic, cooking rice wine, and salt then mix well.
2. Marinade the pork in the combined mixture for at least 1 hour.
3. Heat a cooking pot then put-in the pork along with the marinade and water then let boil.
4. Add brown sugar and stir to distribute evenly.
5. Simmer for about 40 minutes flipping the meat after 20 minutes or so to tenderize the other side.
6. Turn off the heat and remove the meat from the cooking pot.
7. Allow the meat to rest for about 10 minutes then slice.
8. Transfer to a serving plate and top with the thick sauce then serve.
9. Share and enjoy!

Chicken Afritada Ingredients:
2 lbs chicken, cut into serving pieces
1 large potato, quartered
1 large carrot, sliced
1 large bell pepper, sliced
1 cup green peas
8 ounces tomato sauce
4 cloves garlic, minced
4 pieces hotdogs, sliced
1 medium onion, diced
1 1/4 cups chicken broth or stock
2 pieces dried bay leaves
1 teaspoon granulated white sugar
4 tablespoons cooking oil
Salt and ground black pepper to taste


Chicken Afritada Cooking Instructions:
1. Pour-in cooking oil in a cooking pot or casserole then apply heat.
2. Pan-fry the chicken until the color turns light brown (about 3 minutes per side).
3. Remove the chicken from the cooking pot.
4. On the same cooking pot, sauté garlic and onions.
5. Put-in the sliced hotdogs and pan-fried chicken then cook for a minute.
6. Pour-in tomato sauce and chicken stock then add bay leaves. Simmer for 30 to 40 minutes.
7. Add the potato and carrots then simmer for 7 minutes or until the vegetables are soft.
8. Put-in the bell pepper, green peas, salt, sugar, and ground black pepper then cook for 3 minutes more.
9. Turn-off heat then transfer to a serving plate.
10. Serve with steamed rice. Share and enjoy!

3. Add water, whole pepper corn, and dried bay leaves then bring to a boil. Simmer for 40 minutes to 1 hour
4. Put-in the vinegar and simmer for 12 to 15 minutes
5. Add salt to taste
6. Serve hot. Share and enjoy!
